Vibrant natural Papayo micro-lot from Huila: candied lemon, forest fruit and a jammy, textured finish.

The dramatic, lush and beautiful green hills of the Huila region in the south west of Colombia are home to some truly amazing coffees. Its high altitudes, cool nights, and rich volcanic soils produce coffees with exceptional quality year in year out. Farmers in this region tend to work small plots, often on steep slopes, managing their own processing. This regional diversity adds uniqueness even between farms in the same valley, and makes Huila one of Colombia’s most respected origins for traceable micro-lots.

Wilmer’s approach is grounded in consistency and transparency—he processes each variety separately, aiming to highlight intrinsic cultivar differences rather than override them. This lot was processed using an anaerobic natural method. After harvesting, the coffee was mechanically cleaned and hand-sorted. It was then sealed in oxygen-restricted bags for three days before drying in thin layers over a month. This slightly less technical process has worked to perfection with this rare Papayo cultivar, producing a juicy, clean and fruit-forward varietal expression

This light filter roast highlights primary flavours of candied lemon, ripe tropical fruits, and fresh raspberries. Bright, juicy acidity is balanced by dense, jammy sweetness, with dark chocolate, cherry and watermelon supporting the core profile. The mouthfeel is syrupy and textured, coating the palate before a winey finish adds structure and depth. As it cools the vibrancy and clarity remains, showing the quality of Wilmer’s processing.
